How About An Old-Fashion Chocolate Dessert Tonight - Easy Bittersweet Pudding, Sauce, Fudge Pie

Chocolate has been a favorite of almost all the world's populations over the years. Personally, I love all the modern chocolate but I love the old fashion chocolate recipes of my younger days,too. The next time you decide to make something chocolate, why not try one of these recipes from my vintage recipe collection? This decadent Bittersweet Chocolate Pudding is easy and good enough to impress guests. They will never guess the secret ingredient that brings out the pleasant bittersweet touch! Busy cooks can bring out a delicious dessert by serving this rich homemade Chocolate Sauce over a store purchased pound cake or some ice cream. It is also good with strawberries and other fruits. This Fudge Pie Alamode is unique without a crust.

EASY BITTERSWEET CHOCOLATE PUDDING
Cola (I use COKE) takes the place of the milk in this pudding. It adds a pleasant bittersweet flavor. A great surprise for family and friends!

1 pkg (4-serving size) chocolate pudding mix (not instant!)
1 cup water
1 bottle (6 1/2-fl oz) cola beverage
whipped cream for garnish, if desired.

Combine the pudding mix, water, and cola in a saucepan. Cook while stirring over medium heat until the mixture comes to a full boil. Remove the pan from the heat and pour evenly into 4 individual dessert dishes. Chill until set. Garnish with whipped cream if desired.

Note: You know this is an old recipe when the cola is called for in a 6 1/2 ounce bottle! You will probably have to measure out your cola today!

I am a diabetic now and can still make this pudding. Use a sugar-free pudding mix and I prefer a Coke Zero but Diet Coke would be okay, too.

GOOD OLD FASHION CHOCOLATE SAUCE
3/4 cup granulated sugar
1/2 cup baking cocoa
3 tablespoons water
2 tablespoons corn syrup
1/2 tall can of evaporated milk
3/4 teaspoon vanilla extract

In a heavy saucepan mix the sugar and cocoa together. Stir in the water and corn syrup. Cook over medium heat, stirring constantly to boiling. Boil, while continuing to stir, for 3 minutes. Remove pan from the heat and add the evaporated milk and the vanilla extract.

This pie is a recipe of my late mother's from the 1950s. My mother absolutely loved chocolate and would have made all our desserts chocolate except my dad tolerated it. That was the one area my parents could not agree on! I can remember how dad would come home after work and find a chocolate pie or cake. He would almost always ask if there was another dessert hidden somewhere. And there often was! Usually, when mom made a chocolate pie she would also make a lemon, my dad's favorite. I like this pie because I don't care for crust.

FUDGE PIE ALAMODE
3 sq. unsweetened chocolate
1/3 cup butter or margarine
2 cups granulated sugar
4 eggs
2/3 cup chopped walnuts
1/4 teasp. salt
1 teasp. vanilla extract
1 pt. vanilla ice cream

Day before: Start heating oven to 350 degrees F. In double boiler, melt chocolate and butter, stirring. Cool slightly. Stir in sugar. In large bowl, beat eggs; stir in chocolate mixture, then nuts, salt, and vanilla. Pour into a well-greased 9" pie plate. Bake 45 to 50 minutes. Cool on a wire rack and refrigerate until ready to serve. Cut into pie-shaped wedges and serve topped with ice cream.

The Perfect Valentine's Day Fudge Recipes

Nothing satisfies a sweet tooth better than a piece of fudge. Decadently intense chocolate fudge recipes to the sophisticated and elegant vanilla fudge recipes, they are all delicious. Fudge is a creamy, silky smooth treat that is easy to prepare and makes the perfect Valentine's Day gift. Your love will be so impressed with you after making these simple recipes for them.

Double Chocolate Fudge:

Ingredients:

2 cups (12 oz) semi-sweet chocolate chips
1 (11 1/2 oz) package milk chocolate chips
1 (14 oz) can sweetened condensed milk
2 Tbsp. heavy cream
2 teaspoon vanilla extract

Directions:

1. In saucepan, over low heat, melt semi-sweet chocolate chips with 2/3 cup sweetened condensed milk, 1 Tbsp. cream and 1 tsp vanilla.
2. Remove from heat. Spread evenly into foil-lined 9-inch square pan.
3. In another saucepan, over low heat, melt milk chocolate chips with remaining sweetened condensed milk, 1 Tbsp. cream and 1 tsp vanilla. Remove from heat.
4. Spread over fudge in pan. Chill 2 hours or until firm. Turn fudge onto cutting board; peel off foil and cut into squares. Store loosely covered at room temperature. Makes about 2 1/2 pounds.

Some great add-ins to make this fudge even sweeter:

1 cup of walnuts
1 cup of chocolate sandwich cookies crushed
1 cup of pecans
1 cup of chocolate candies
Or you can get really creative and show your love by topping the fudge with conversion hearts. Be sure to let the fudge sit for 30 minutes before topping it with the hearts.

If you love really isn't into chocolate then try this wonderful vanilla fudge recipe or try some of the great flavors you can make with this simple recipe.

Vanilla Fudge Recipe:

Ingredients:

4 cups sugar
2 Tbsp. butter
1 large can evaporated milk
1 small jar marshmallow fluff
1 teaspoon Vanilla

Directions:

1. Cook sugar, butter and evaporated milk, stirring constantly, until a medium firm ball is formed when dropped in cold water (about 25 minutes). Cool slightly.
2. Add marshmallow fluff and vanilla. Beat until cool and creamy.
3. Pour into a buttered 8 inch square pan. Chill until firm.

Make it Coffee
Add 2 Tablespoons of instant coffee dissolved in 1 tablespoon of warm water along with the vanilla.

Make it Maple Walnut
Add 1 cup of chopped walnuts and 2 tablespoons of maple extract.

Make it Raspberry Swirl
After pouring the fudge into the pan drop 5 rounded tablespoons all over the top of the fudge and using a knife gently swirl it around.

Enjoy These Delicious Chocolate Recipes: Cookie Bars, Turtle Pie, Pinto Bean Fudge

For all you chocoholics, here are some yummy chocolate recipes. From Double Chocolate Cookie Bars made with an Oreo cookie crust to Chocolate Turtle Pie to Chocolate Fudge with a surprise ingredient of pinto beans, you will love these chocolate treats.

DOUBLE CHOCOLATE COOKIE BARS
2 cups Oreo-type cookies, finely crushed*
1/2 stick butter, melted
2 cups (12-oz pkg) semi-sweet chocolate chips
1 can (14-oz) sweetened condensed milk
1 tsp vanilla extract
1 cup chopped pecans

Pre-heat oven to 350 degrees.

Combine the cookie crumbs and melted butter until well mixed. Press onto the bottom of a 9 x 13-inch baking pan.

In a medium saucepan, over medium heat, melt 1 cup of the chocolate chips with the sweetened condensed milk. Stir in the vanilla. Pour this chocolate mixture evenly over the crust in the pan. Sprinkle the remaining cup of chocolate chips and the chopped pecans over the top.

Bake at 350 degrees for 20 minutes or until set. Cool in the pan on a wire rack. Cut into 24 large bars or 36 smaller bars.

These bars are good at room temperature or chilled.

CHOCOLATE TURTLE PIE
1/4 cup caramel ice cream topping
1 prepared graham cracker crust
1/2 cup chopped pecans
2 pkgs (4-serving size)chocolate cook and serve pudding & pie filling
3 cups milk
whipped cream, for garnish

Spread the caramel topping over the bottom of the crust. Sprinkle the pecans over the caramel. Refrigerate.

In a saucepan, stir the pudding mix into the milk. Stirring constantly, cook over medium heat until the mixture comes to a full boil. Remove from heat and allow to cool for 5 minutes. Stir twice during cooling. Pour into the crust and place plastic wrap on the surface of the filling. Refrigerate about 3 hours or until set. Before serving garnish with whipped cream, if desired.

Yield: 8 servings

PINTO BEAN CHOCOLATE FUDGE
1 can (15-oz) pinto beans, rinsed and drained
1 cup cocoa powder
3/4 cup butter, melted
1 tbsp vanilla extract
7 1/2 cups confectioners' sugar
1 cup chopped walnuts

Place the beans in a microwave-safe dish and mash with a fork until smooth. Cover the dish and heat in microwave 1 1/2 to 2 minutes or until heated through. Remove dish from microwave. Add the cocoa powder, butter, and vanilla. This will make a thick mixture. Slowly stir in the confectioners' sugar. Stir in the nuts. Press the mixture into the prepared pan. Cover and refrigerate until firm.

Yield: 3 1/2 pounds

Note: The pinto beans replace some of the butter normally used to make fudge. This fudge is creamy and the walnuts add crunch. No one will believe you made this fudge with beans!
